Ok let’s check this easy way of cooking Nasi Uduk using rice cooker.
2 cup of rice-use the cup which comes with rice cooker (rinse with water)
2 Indonesian bay leaves (daun salam)
2 lemongrass, brushed and knotted
200 ml coconut oil
1 tsp of salt
Place all ingredients in a rice cooker pot and cook until ready. Let rest for 15-20 minutes before opening the lid. Stir with the rice cooker paddle.
Easy isn’t it? Just like when you make your regular plain rice in rice cooker. However, before cooking, there are several tips that you might need to notice.
* The number of the coconut milk must to be in right consistency, not too thick or too thin.
* Jasmine rice is the best rice to make Nasi Uduk. But if you couldn’t find one you could use any rice, soak it in water around 10-15 minutes before its cooked.
Serve the rice with ayam ungkep (fried chicken), tempeh goreng lengkuas (fried tempeh in galangal sauce), and telur dadar gulung (rolled fried egg). You could also add it with a slice of cucumber to accompany your nasi uduk. (*)
